These cheese potato pancakes are a family favorite! It’s the one way my kids happily eat mashed potatoes—and by “eat,” I mean they devour them. So easy and delicious!

Ingredients for Cheesy Potato Pancakes Side dish:
►4 cups mashed potatoes
►2 cups (8 oz) shredded mozzarella cheese
►1 large egg
►1/4 cup flour (or up to 1/2 cup flour for creamier potatoes)
►2 to 3 Tbsp chives, chopped
►1/2 cup plain bread crumbs
►Light Olive oil or Canola oil to saute
►Sour cream to serve

i could literally eat potatoes every day. My most loved food, no matter how they are prepared !! This is a great recipe. I have used my leftovers this way many times, I do not always use mozzarella. Some times I combine mozzie along with sharp. So delicious, just wonderful, which makes me hungry right now !!

Just finished breakfast. I went with the basic technique here and added some very finely chopped red onion and some cooked broccoli that was in the fridge. Seasoning was truffle salt, cracked black pepper and garlic powder. What advice can I add to this? Don't shy away from heating the pan and be ready to add oil while cooking for starters. These should cook fast and need to be almost seared to develop that nice golden crust. Use at least medium high and don't walk away. And with scrambled eggs with steak we felt the sour cream would have been a distraction so we went au natural! Had to ask my wife not to add her go to applesauce that she always uses with potato pancakes so she could tell me what the actual flavor of the dish was. She thoroughly enjoyed them as is and said they were a great addition to a nice Sunday breakfast. Looking forward now to leftovers. Thanks as always Natasha! Another winner.
