I just cook the noodles in the broth when it simmers - It flavors the noodles, thickens the broth a tiny bit and also saves the noodles cook stage 😃

I've had spicy and creamy vegan ramen at an authentic Japanese owned ramen bar. It was really good. It came with lots of mushrooms and slices of crispy fried tofu. So I already know this ramen will be amazing. Spicy pickled kelp on top would really work well and wood ear mushrooms.

Trader Joe’s has this amazing Vegan Chicken Seasoning! It taste just like top ramens seasoning without the yucky chicken.

I would love to see you make a “lazy” vegan pho. It is usually labor intensive, but I bet you could simplify it in a wonderful way! Also, how about a recipe for eggless vegan mayo? Sine the quarantine began, I can’t find Vegannaise anywhere in my area. I have seen eggless vegan recipes on line, but they look runny and gross. Thx for being u!

Peanut butter is a delicious addition to the ramen broth for that creamy/nuttiness! I haven heard of adding soy milk but will give it a try!

have you tried adding tahini to make it creamy? It's my absolute favourite! elevates the dish so much and is great if you dont want a super soupy ramen

If you’re ever in Los Angeles, Daikokuya (Japanese ramen bar) has an amazing vegan sesame ramen. The best I’ve ever had.

I do this all the time with broccoli slaw . I saute it with red pepper, green onions and sesame seeds with a little soy sauce garlic and ginger my favorite quick dinner.

i fancy up my ramen with whatever veggies i have in the fridge but my favorite is napa cabbage, bean sprouts, and lots of green onion, start the water with my veg until tender, add noodles, seasoning packet (some or all), sesame oil, soya sauce, homemade ground chili flakes, and some ginger/garlic, when almost done, stick a slice of american cheese either on top while cooking or throw it in the bottom of your bowl, makes it so creamy! it definitely has alot less sauce/soup than normal but so good, sometimes i crack an egg and put the lid on for a minute, ramen with a soft boiled egg, yum!

I like to crush some dried seaweed in my ramen (if you toss it all in whole, it will rehydrate HUGE) and toss in some frozen edamame and chickpeas and maybe sweet peas in my ramen. I like the soup. I used to put mushrooms in my ramen but I feel like the flavor dominates the dish too much. Toss in some garlic and ginger... I will also get two packages of fried tofu cubes from a local Asian grocer (west coast= 🙌🏼) and then slice the big cubes diagonally and freeze them in a big bag for convenience and then toss in about half a dozen pieces for a tasty whole protein. If I am feeling the need for heat, I will crush some whole dried red chilies. Also usually add sesame seed oil and a little apple cider vinegar too. One time I boiled an egg in it which was simple and tasty but then I realized that the egg might not be so clean so next time I might boil the egg separate! lol This dish I eat once or twice a week!

Looks amazing! I recommending adding spicy chili oil. It’s sesame oil but it’s spicy and red in color . Love that stuff . 😍✨

So glad you posted this! I had bok choy in the fridge that I couldn’t decide what I wanted to eat with and this was PERFECT! I didn’t have soy milk and didn’t want to go to the store so I used oatly and it still tasted great!!

Here in Aus the brand "Fantastic" do a Vegan veggie Laksa noodle bowl. I level that up all the time adding a handful of pre-cut dry slaw mix (cabbage, carrot, celery, green onion) and add a handful of frozen corn and a knob or two of froz spinach. I literally just add boiling water to the noodle bowl, toss in my veg, cover it up and let sit for 10 mins to "cook" haha. SO delicious! 😊👌

This looks delish! Our family does something similar, but I’m going to try your method next time we make ramen. We also like adding thickly-sliced mushrooms to simmer with the veg and a piece of nori to the simmering broth— both add really good flavor. 🍜
