That’s a pretty cool trick. Try freezing the butter, and then grating the butter into the self rising flour. Mix into the flour thoroughly. Stick in the freezer for 10 min, pull it out and the rest of the steps are pretty much the same. (And you don’t have to do this because it’s already in self rising flour, but a teaspoon of baking powder makes them puff up even more.) Basically the same recipe but with a couple changed steps.

My favorite trick for when I used to make biscuits is to freeze the butter half an hour before and add it to the flour by grating the frozen butter with a cheese grater.

Apparently you can get higher layers if you don't turn the cutter but just push straight down. I LOVE her show and her videos. Her enthusiasm and zest is infectious!

Should I use cold cold butter if I’m just using a hand mixer/ spatula ?

Couldn't you also chill your kitchen aid mixer bowl to keep everything extra cold? Eight minutes is a long time to mix. I'd imagine that the butter would get a little bit warm in that time.
