I love to slice up red bell peppers and take them to work for lunch. I eat them with salad dressing by themselves as a snack or along with my salad.

Make a vonderful Red bell pepper soup
first roasted with Garlic cloves, Vidalia Onion, olive oil, vegetable or Chicken stock, and throw in some salt, pepper,
AND a little "Red Thai Chili SAUCE ".
