Some shops also offer a choice between materials for lining. The one I use offers silk linings, but they're a lot more expensive

This is easy. Any bespoke house will have options based on the material and pattern you decided upon for your suit. You should listen to their option choices and make the best decision based on the colour options that resonate with you.
