Hey y'all so we're a couple weeks into the new year but it's a perfect time to set our intentions and to make sure we are staying on track. Today we have some mindful vegan options to help us feel full and healthy while we navigate our busy lives. And even if meal prep isn't your thing, these recipes make perfect week-night meals. Atlanta Dinner Party Tickets:
Fat-Burning Cabbage Soup: (Use whatever veggies + cabbage you like)
1 onion, diced
2 tbl minced garlic
3 celery stalks, diced
3 scallions, chopped
1 cup frozen carrots
1 bag frozen peppers
2 clusters oyster mushrooms
1-28oz can diced tomato (no salt added)
2 carton vegetable broth
1 head of cabbage, cut into bite sized pieces
1 handful spinach
2 tbl sweetener (like agave or maple syrup
2-3 drops liquid smoke
Ancestor Shimmy of:
Creole seasoning
Salt
Pepper
Garlic Powder
Onion Powder
Smoked Paprika
Chickpea Curry:
2 tbl olive oil
2 tbl curry powder
1/2 bunch cilantro (leaves cut off, stems finely chopped)
4 scallions (chopped, white and green parts separated)
2 tbl minced garlic
1/2 red bell pepper, chopped
1 cup frozen carrots
1-15oz can chickpeas, drained and rinsed
1 can coconut milk
2 husky pinches of spinach
1/2 fresh lime juice
5 allspice/pimiento seeds
1/2 tsp ground ginger

Smoked Paprika
Pinch of cayenne seasoning
Cauliflower Rice:
1 bag cauliflower rice
1/2 fresh lime juice
1/2 bunch of dropped cilantro leaves
Stuffed Peppers:
4 Green Peppers (or whatever color you prefer)
1 onion, chopped
1 bag mixed cauliflower rice
1 bag meatless crumble
1/2 cup frozen corn
1/2 can fire roasted tomatoes
