Cookies & Cream Chaffle | My Version of an 'Oreo' Chaffle

Chaffle Recipe:
2 eggs
1/2 cup shredded mozzarella cheese
3 Tbsp cocoa powder
2 Tbsp powdered erythritol
2 Tbsp heavy whipping cream
1 Tbsp coconut flour
1 tsp vanilla
1/2 tsp baking powder
pinch of pink salt
Mix together wet ingredients, then add dry ingredients, mixing in between each one, and adding the coconut flour last.
Pour on waffle iron until it's just covered and cook for 3-5 minutes. The number of chaffles you get depends on how much you put in the waffle iron - these will spill over if you put too much.
When done, remove from iron and cool.
Cream Filling - this makes a LARGE amount
2 cups powdered erythritol (more or less to taste)
5 Tbsp softened butter
4-6 Tbsp heavy whipping cream
2 tsp vanilla
(4 Tbsp sugar free PB Fit or Lakanto Peanut Butter powder if you're making peanut butter cream)
Mix together with blender outfitted with a whisk attachment until this is all incorporated. Makes about 2 1/2 cups of cream.
We put about two tablespoons of cream in between two chaffles and cut it in half, each half being a serving.
Leftover cream can be stored in the refrigerator for about one week and can be used on other yummy, Keto friendly desserts and drinks - cinnamon rolls, cookies, cakes. You'll want to warm it up a little first by putting it in the microwave on 50% power for about 30 seconds depending on the amount you're warming up.
