The holidays are upon us so it's time to make candy. This keto toffee recipe is my favorite so far and with only 4 key ingredients - it's easy to make so you can always have some around to nibble on when those holiday treat cravings hit.

KETO TOFFEE RECIPE
Makes 20 pieces

1 cup unsalted butter
1 cup packed brown sugar free sweetener (Swerve brand)
2 tablespoons water
½ teaspoon salt
1 teaspoon vanilla extract
7oz sugar free chocolate chips
1 tablespoon flaked salt
⅓ cup crushed pecans

1️⃣ Prepare a square baking dish or ¼ sheet pan by lining it with parchment paper. Set aside.

2️⃣ In a saucepan, add butter, sweetener, water and salt. Heat over medium heat and bring to a boil. Continue to let cook, stirring occasionally until temperature on a candy thermometer reads 300 degrees.
3️⃣ Remove from heat. Immediately stir in vanilla and pour into prepared baking dish. Even spread toffee mixture and let sit for several minutes until the toffee starts to harden on the top. It will turn opaque.
4️⃣ When the majority of the toffee is opaque, sprinkle chocolate chips evenly over the toffee. Cover dish with aluminum foil for 4-5 minutes to help melt the chocolate.
5️⃣ Remove the foil, and spread the melted chocolate evenly over the toffee. Top with flaked salt and crushed pecans. Cover again and place in the refrigerator to further set for 1-2 hours.

** If the chocolate doesn’t melt after covering. Place the dish, uncovered under the broiled on high for 30-60 seconds.

I make hot chocolate with 1 scoop Perfect Keto chocolate collagen, two sleeves of LMNT caramel, and one SkinnyDipped Dark Chcolate Salted Caramel square and 16 ounces of water brought to almost a boil on the stove. Mix thoroughly and it stays hot for hours in my insulated cup. I also add 1 tsp Bulletproof MCT oil but it can be omitted.

I made it yesterday. i dont like the "medium-crack", I prefer the hard crack for toffee. Anyways, its an expensive experiment. I will be trying this recipe with allulose cooked to 310 F like someone mentioned and try this again.

With the pecans it DOES have a minuscule amount of carbs per serving but looks great!

So, I made this and it taste amazing however the toffee has a real grainy almost sandy texture and the butter and sugar separated as it cooled. Is it supposed to be like that?

Well I screwed up my first batch in every way shape and form possible! Too big of a pan
so they were super thin. To I was reading the recipe over and realized I only used 1 stick
of butter instead of 2! Then lastly I thought I read 320 that my thermometer rose to when
I'm thinking maybe it didn't even reach 300. May give it a second shot tomorrow.

Girl you rock…can’t wait to make this…I’m going to use real semi sweet chocolate that lily’s kills my stomach I don’t know why but the Swerve will be sugar free 😂Holidays will be more fun with this around for sure 😀

I made this and actually found it to be way too sweet. Didn't know this was even possible. I'd love to know how to make this taste less sweet.

So if you need it brown then make brown butter and add the sweetener.
