Potato Scallops

Ingredients:
2 large all purpose potatoes, cut into 1 cm slices
300g plain flour, plus extra for dusting
2 tsp baking powder
1 tsp salt
½ tsp paprika
1 tsp garlic powder
700ml sparkling water, icy cold
2L safflower oil or vegetable oil, for frying
Salt, to season
Chipotle mayo, for serving

I grew up in Coomera and Surfer's Paradise, QLD in the '60's. Truly a paradise. We moved back to the States and have always missed Potato Scallops. I now make them to go with our smoked Texas style brisket and our friends go crazy for them. Can't afford brisket very often now, but will make a batch of these next week. These will recrisp up in the air fryer. Thanks for posting this. I miss meat pies too! -- Ft. Worth, TX

As a suggestion to all, I par boil the approximate 6-8mm slices of potato for 4-6 minutes in salted water (still al dente!) before battering , taking them from the boiling water/strainer & laying them on a wire rack so the steam/moisture can evaporate & wait until they cool down. Dust in the flour & batter as Justine has, yes beer a great raising agent & flavourer, like red wine in cooking dont use any beer you wouldn't drink 😄. The potato will be fluffier & lighter & the batter will adhere to the potato better. Test it out & see the difference. Enjoy 😉

Add 1/2 cup corn flour to the mix it will give you a better crunch and will help to stop the batter from going soggy after a while

In Victoria we call them Potato Cakes, but I like the term Potato scallops, then again they are my go to snack when I'm out, I like them with Chicken Salt.

I grew up in Wollongong in the early 70’s and knew them as potato scallops; when we moved to the UK in ‘77 I was devastated that they weren’t available there 😢. It took me 25 years to return Down Under and they were one of the first things I searched out. I now live in QLD and can’t NOT order one whenever we have fish & chips.

Of course; now I crave “a bag of scraps” as well… can only get them if I make them myself!

Growing up in the 1970's here in Scotland, my dad made these all the time. We knew these as potato fritters. 👍 I haven't eaten them in about 25 years. Thanks for the reminder xxx.

In South Aust we call them Potato Fritters... Pineapple done in batter is pretty damn good as well, sprinkled with cinnamon sugar. Now we want some potato fritters!!! Yuum

In Scotland they're called fritters, love them. No garlic just salt and vinegar after cooking. On a crispy roll, delish. X

In Tassie, they are potato cakes. Moved to WA years ago and decided to have fish and chips one day. Saw on the menu board "scallops 20 cents each". Great! "I'll have a dozen scallops please." Imagine my disappointment when I got home to find a dozen friggin potatoe cakes!
