I always wondered how they did this but I never looked it up. That makes so much sense. I make my own chicken bone broth all the time and it's gelatin before I heat it up again.

Now I have to do this!

There are many ways in which soup could be put into dumplings, In fact, all dumplings are meant to have some amount of soup in it. Using gelatin stock is a southern costal Chinese way. Northern Chinese dumplings can be soupy by simply preparing the meat filling by mixing in a lot of liquid before it water or stock.

My furmom just let all the meat with skin and bones hang out in the pot with spices and some salt and pepper. After at least a couple of hours, strain the broth, let it cool, leave it in the refrigerator overnight and by the morrow we have gelatinous goodness for dumpling fillings that goes with seasoned minced meat Yum!

Me and my brother make these but I watched I video where he put the cubes in separate instead of mixing it in but me and him just did this anyway because it made more sense.

It’s actually not that hard to make everything at home, it is just time consuming. It’s a great rainy weekend project for those who like to cook, and a great time for a trip to your favorite dim sum shop if you don’t. These are delicious.

I make mine with only chicken breast and chicken stock, and I do add gelatin to mimic the collagen rich stock made from animal feet and other bits. Sure, it’s the lazy way out but honestly I could not tell a difference between the two stocks when I made them.

I’ve also made a vegetarian version using agar agar and shiitakes for the standout ingredient, and they were pretty darned good as well, but not as good as the chicken soup dumplings. I need to work on seasoning the mushroom stock better for sure.

There’s such a thing as 汤包 which literally means soup dumpling, which is entirely soup inside with a little meat. You eat it by placing a straw directly into the giant dumpling and drinking the soup until it’s good enough to eat the rest of the dumpling.
