HOW TO MAKE CAKE AND YEAST DONUTS | Topped with a Champagne Glaze

🍩 Happy National Donut Day!

To celebrate, this week we are making cake and yeast donuts with a champagne glaze. Yes, you heard correctly, there is such a thing as cake and yeast donuts, who knew?! Don’t worry though, if you’ve never had either this is your sign to gather your ingredients (which 99% you have in your kitchen already) and fry up some delicious donuts!

🎂Cake Donuts

🥣 Ingredients
½ cup butter
¼ cup sugar
3 cups flour
1 tbsp. baking powder
1 tsp. baking soda
1 pinch nutmeg
1 pinch cinnamon
2 eggs
1 cup buttermilk

🗺 Directions
With the paddle attachment, beat the butter, then add the sugar followed by the eggs. When properly combined, switch to using the dough hook and alternate adding the dry ingredients and the buttermilk to the mixer. Continue to mix until properly combined, you can even finish kneading the dough with your hands.
Roll the dough out on a floured surface until it is about ½ inch thick.
Cut the donuts and get ready to fry!

🌾 Yeast donuts

🥣 Ingredients
1 ½ cups whole milk
4 tbs. butter
5 cups flour
1 pinch nutmeg
1 pinch cinnamon
¼ cup sugar
1 tbsp. yeast
2 eggs
⅓ cup water

🗺 Directions
Over medium heat combine the milk and butter until the butter has melted. Remove from heat and let it cool just a little. In a stand mixer fitted with the dough hook, combine the flour, nutmeg, cinnamon, salt, sugar, and yeast. Add the cooled butter mixture and water and continue to combine. Add the eggs one at a time and continue to mix on medium speed.
The dough will be runny, but that’s ok. Transfer the dough to an oiled bowl and cover for about an hour or until the dough doubles in size.
Once the dough is ready, roll it out on a floured surface until it is about ½ inch thick. Cut the donuts and get ready to fry!

🍳Frying
In a large pan, heat up the oil of your choice over a low-medium heat. Fry the donuts for a minute or two on each side or until the donuts have a golden brown colour. Listen to your oil and adjust the temperature as needed. When fully cooked, transfer to a pan lined with a paper towel for all the extra oil to absorb.

🧊Glaze

🥣 Ingredients
¾ cup icing sugar
3 to 4 tbsp dairy of choice (or any liquid)

🗺 Directions
In a large bowl add your sifted icing sugar and a tablespoon at a time, add the liquid of your choice. For a runnier glaze add more liquid, for something thicker add less liquid.

🌟 Review and Tips
1. The cake donuts were easier to make! I didn’t have to worry about making sure the yeast activated, or over rose afterward.
2. You can use a fruit puree, similar to the one we made in the churro video, and use that as a glaze or a filling
3. If you want to fill the donuts, it's possible with the cake donuts, but will probably be easier with the yeasted ones as they puff up a bit more
