The EASIEST vegan cake! 🎂😳

RECIPE (1 loaf cake, 1h prep time):
-2 1/3 cup (300g) flour
-1/2 cup + 2 Tbsp (120g) sugar
-1 Tbsp baking powder
-a pinch of vanilla
-6 Tbsp desiccated coconut
Mix to combine
-1 2/3 cup (400ml) full fat coconut milk
-optionally chocolate chips
Carefully stir until just combined.
Fill in a lined baking dish and bake at 180C/355F for 50mins.
Let it cool down completely and make a glaze with powdered sugar and lime juice.

I'm so happy with my La Veganista backt cookbook. There are cake and sweets recipes of all kind, that are tasty (and close to the non-vegan taste) and easy to make (the ingredients used to remplace eggs and dairy are simple to find). It's a pity it doesn't have an english translation.
