As always a great video. I suspect that in the US it takes a few days longer for the yeast to grow to such a large colony as you grew but I do have one thought. And that is that using a ratio of 2 parts flour to one part water is going to make this starter a little challenging for people who are a) math challenged and b) who want to use bakers' math to create specific levels of hydration for their sourdough loaves. 150 g of starter has 50 g of water and 100 g of flour; 200 g of starter 75 g water and 125 g of flour... but if the hydration was 100 % then you would know that a 200 g starter would have 100 g of water had 100 g of flour and 500 g of starter would have 250 g of water and 250 g of flour.

I used the beer yeast tonight. Turned out very bitter. Perhaps an IPA wasn't a good choice.
