An ENDLESS supply of sourdough starter with NO DISCARD

Here is my no discard, no-waste sourdough starter maintenance routine. This is how I feed my starter weekly, every time I bake sourdough bread. This routine isn't new, lots of people use it, and who knows?...it might even be how ancient bakers fed their starters without discarding their precious bread "mother." I hope this feeding/maintenance routine is as helpful for you as it was for me when I learned about it.

Get my Sourdough Starter Guide here:
(It shows you how to make a sourdough starter in six days and maintain it with zero discard forever!)

Here I explain my no discard method in written form:

Big shout out to @BakewithJack for the "scrapings method" idea that inspired my maintenance routine. I like to keep a little more starter than just the scrapings, but his idea was super helpful to me a few years ago! Thanks, Jack.

I've been doing something like this for some time and it works great but you should be aware that you are only one accident or distraction away from losing your starter... It's a really good idea to keep a small jar of frozen starter or to dry a few smears of your starter on parchment paper, just in case!

My neighbor recently gave me 100yr old sourdough starter (going way back <3) This is how the fam has been doing it for generations. He has kept his SS in the fridge for 2 months once, although not recommended, lol. I generally make bread on weekends, maybe every other or every 3rd. I just take it out and feed it the night before then leave it on the counter. So much easier. I'm all about the no fuss. After using most in my recipe. When I re-feed it, I also leave it on the counter for an hour or two to rise, before putting it back into the fridge. Happy baking :)

Thank you for this video. I'm new to sourdough and started my starter about two weeks ago. It makes me sad when I see almost a whole bag of flour gone and it's basically just discarded. It's waste and I don't like wasting. I will do this in the morning.

Thank you!! This is what I’ll do going forward. I’m a newbie to sourdough and had 2 wonderful established starters and made the rookie mistake of leaving them in the oven with the light on bc it’s warmer than my cold house. Well, I went to bake a loaf I had proofing overnight and preheat the oven with my starters in the damn oven. 😫 I was devastated. I ruined both of my starters. Starting over from ground zero.

Thank you for the no nonsense approach. That other guy who does the feed and discard every 12 hours makes me wonder...

Finally it’s starting to all make sense. I’m so glad I came across your channel. I just hope it works for me. I love sourdough so much better and it’s so much better for my stomach.

I might actually try making starter now. I felt overwhelmed by all the videos having to constantly feed the starter, like a baby that never stops eating or grows up😂. Plus, the discard. Your video makes it seem so much more manageable and that I don't have to think about the stater until I want to bake bread. But I am wondering, will the starter ever do bad? Like if I don't use it for a month?
