Don’t wash the mushrooms. Use a damp towel to remove the dirt.

Also button mushrooms should start in a hot, dry pan. You will see the water come out of the mushrooms as they are cooking, which is what you want.

After the water has evaporated, THEN you add you fat and aromatics. They will cook much better this way.

Don't wash them they soak up the water and become slimy... use a small brush to rid them of the soil.

Terrible.. you Never put oil to mushrooms before you cook them to extract the water !

Put them in a dry pan to sweat. Otherwise, plate of slugs.
