Actually as an Italian this is a 10/10 for me, you really took the best of both world between creativity and tradition, love the process it felt like a michelin star recipe which is new to see for such a traditional dish as carbonara.
Plus the fact that you used guanciale and not bacon makes me so happy that I’m gonna cry ahahah

That reincorporating the white thing is intriguing!
Also using some fat to mix yolk and cheese is a great idea!

I'm Italian and I gotta say well done! Nothing wrong here, and I think it's actually quite a interesting twist. I'd just add a lot more black pepper, but that's personal preference!

Sounds amazing. I learned two things from Luciano Monosilio‘s (also known as the King of Carbonara in Italy) videos you might wanna try:
1. He prefers Spaghetthoni and so do i. It will bring a new layer of texture to the carbonara and it is easier to cook to al dente.
2. He cut his Guancale in thicc cubes. That allows you to cook it crispy on the outside and juicy in the inside.

You are by far the most accurate american i’ve watched making a carbonara. You even pronounced it correctly and followed the traditional recipe. I own a café that makes italian traditional pasta and i never used egg whites with the sauce, and when you did it just elevated everything. Well done 👏🏽

This is almost exactly how my Italian grandma makes it. All I would say is grate equal parts pecorino romano and parmesan, instead of just pecorino. This carbonara is literally perfect. Sometimes I wish my mom didn’t move to America so I could live in Italy with my grandma’s amazing cooking. 😭
