I always salt my steaks a day before I cook them. Just put them on a wire rack and in the fridge. They come out really nice

I actually thaw me steak with olive oil and sea salt. let it sweat and absorb and then it is ready for the grill. My wife says i make restaurant quality steaks from my kettle grill.

No. Truth be told the best way to make a steak is seasoning with everything except salt then finally once it is cooked and ready to eat, you throw some salt on top. That is the best way, the most flavourful way it keeps the meat the most juicy.

Salt is what your tasting. That much salt is like salting Sweet Corn on the cob. Your only going to taste the salt.

Make sure you place the steaks in a location in the fridge that allows maximum exposure to leaking refrigerant for added flavor and full tenderness.

For those that do this, this method is called dry brining. Be careful with how much salt you add, trust me, you do not need a lot. Do not be "liberal" with the salt, put a very light coating across, and let it dry brine for an hour, this makes a noticeable difference once they are cooked.

It's also good to dry-age them in the fridge, on a wire rack, at the bottom shelf (to prevent exposed meat from affecting your other food). Different people have different times, but I would say the best is 8 - 12 hours for a reverse-seared rare steak. For medium rare, I would let it sit in the fridge for 18 hours before reverse searing.

Are you letting the meat sit on the counter once you salted it or does it go into the refrigerator?

I let mine sit salted on a rack in the refrigerator overnight. So GOOD!

I just salt it few seconds before and throw it in a hot pan. Comes out juicy every time, never had to wait hours for a steak to get juicy
