5 1/2 lb Whole Chicken (I choose organic)
5 Medium Gold potatoes
3 Medium Carrots
1 Medium Onion
3 Large Garlic cloves
2 Sprigs Fresh Rosemary
2 Sprigs Fresh Thyme
1 Sprig Fresh Sage
1 Lemon cut in half
Kosher Salt as needed
Pepper as needed

SEASONING INGREDIENTS _______
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Lemon Pepper
1/2 tsp Poultry Seasoning
1 tsp Sweet Paprika

Wonderful recipe! Rachel, this chicken looks so delicious. Big and meaty, and organic, too. This is a must try recipe for us. We can’t find such nice chickens in our area, but I may cook up 2 chickens for this meal, because I don’t think there would be enough chicken with only one, because I know everyone is going to go for seconds. I remember my mom use to cook vegetables with her baked chickens. She used carrots, onions, potatoes, and celery. She always made gravy with the juices that cooked out, and we’d pour it over our potatoes and carrots. We had biscuits, a toss salad, and a side dish of corn or green beans. This will make a wonderful meal on Sunday! Thank you Rachel.
