The term for ”butterflying” the chicken is ”spatchcocking”. Keep the backbone and giblets (if the bird comes with them) and boil them in a cup or two of water for about 45 minutes. Then save ALL the bones after the meal and boil them in the stock from the giblets and backbone, covered with extra water, for about 45 minutes. Scrape the drippings from the roasting pan with some water or stock, and make gravy. The bone stock can be a foundation for soup or a stew, or cook rice in it. This way, you never throw out unused nutrition. You paid for it, you use it.

Wow, so simple, but so rewarding. I like this, as it's pretty healthy, but no crazy amounts of fats. You've got the gravy (I'd also add some potatoes/carrots too cook alongside in the juices). Sourdough Baggette and maybe a nice wine, and it's a winner.

Yup its called spatchcock chicken. I always probe the breast and take out of the oven at about 140f. It carry over cooks to roughly 165 and stays juicy
