Homemade Chipotle Chicken Bowls 🍗🍚

Follow @drmattcooks for more recipes and inspo!

I went to Chipotle and was surprised that a bowl with double chicken and guacamole was almost $18. I went to Aldi right afterwards to get the same ingredients in order to make the bowls at home. The total for the ingredients was $15 (not including the oil and spices I already have at home).

Eating lunch out is perfectly fine on occasion! But, I want to show you all that making it yourself can be more affordable, time-saving, and perhaps even enjoyable. Save the money for intentional dinner dates, occasions, and quality time! Cheers!

Ingredients:
-2 lbs of chicken thighs, boneless and skinless
-3 cups of uncooked brown rice
-2 ripe avocados
-1 can of black beans
-1 can of yellow corn
-6 limes
-2 tsp garlic powder
-2 tsp onion powder
-2 tsp ground cumin
-2 tsp dried oregano
-2 tsp smoked paprika
-2 tsp chili powder
-cilantro or parsley bunch, finely chopped
-salt and pepper
-avocado or olive oil for cooking

Instructions:
-add chicken to a bowl and season with above spices; allow to marinate in bowl for 20 minutes up to overnight
-cook brown rice according to package instructions
-add avocado to a bowl and smash; season with salt, lime juice, and cilantro
-add corn and beans to bowls and season with salt, lime juice, and cilantro
-sear chicken in batches until internal temp is 165F/74C
-allow chicken to rest for 10 minutes before dicing
-add cooked brown rice into a bowl and drizzle with oil; season with salt, lime juice, and cilantro
-prepare meal containers and build the chipotle bowls
-store in the fridge for up to 5 days or in the freezer for up to 6 months

Having worked at Chipotle, you can add canned chipotle peppers and honey to the chicken marinade and that is also what is in the vinegrette with red wine vinegar, salt, & fresh oregano. Also, the corn salsa uses cilantro, fresh red onion, jalapeneo, and lemon/lime juice. Rice and beans should also have cilantro, lemon/lime, and salt. Lastly, guac has cilantro, onion, salt, lemon/lime, jalapeneo, and I like to add fresh garlic outside their recipe. Didnt plan on going through all the things but there you go haha.

Nothing motivates more than the amount we spend on a food outside and then recreating them at home for half the cost!😂👍🏼

Anything home-cooked is always cheaper and better than store-bought—plus you get much, much more than what you would have gotten from the take-out place.

It costs 1/4 the price. So meal prepping makes 4x the amount of meals. Thats the take away :)

TIP: If you plan on making in bulk and freezing the meal bowls, freeze the guac separately in individual portions (or just make it fresh each time - since it doesn't take long to prepare). That way, the rest of the food can be (defrosted from the night before) heated all together. Then the cold (or room temp) guac could be added on top.

My family does this all the time. We even do our own lime and cilantro infused rice with other toppings on the side. It's so much more cost-effective and you can eat on it for a couple days..

My goal this year was to stop buying out because there's food at home. The last few weeks have been tough. Thank you for the wonderful reminder that there's food at home

If everyone really started meal prepping, it’s hard to keep up with at first, but trust me you save a lot if you have kids it’s cool to teach your kids early

You gained a subscriber, and not only because it looks delicious and will save money, but most importantly, you posted the ingredient list. I refuse to sub to any channel that doesn't, so thank you. It's truly appreciated.

$18 for Chipotle is wild. Then they try to tell us prices went up to justify the unreasonable price and we're able to make the same thing at home for less.

The only thing I would change is put the guac (and lettuce) in a separate container, so they don’t become warm and nasty.

I love that you’re experimenting. Your tapping is so gentle and relaxing. Love triggers while rambling.

Double the chicken, bake sweet potatoes, add root vegetables with olive oil and you have your dinner too, add yogurts and fruit for dessert...that is how you change your life, health and save money!!

Also healthier... cooking is also therapeutic! When I'm washing dishes I practice " gratitude " by thinking: dirty dishes = food for me and family. And alot of people don't have that.

Heck yes, I agree with you.
It's nice to get a meal feom Chipotle now and then but better to make it homemade. You can stretch the food at home for many meals ! Your meal looks bomb 😃🎉👍🏽

I do this all the time! Use a tiny bit of red wine vinegar in the chicken marinade it’s so good

Never seen this video before, but I did the same thing with shrimp and since I only had quinoa, I used it as my base. Added veggies, no guacamole. Pretty good and super quick to make!

I do rice, chicken, hot sauce, sour cream, and cheese so I assume it would cost even less for me to make this. Definitely a great idea.
