I do this a lot with both regular potatoes and sweet potatoes. Super easy and tastes great. Sometimes I make a maple miso glaze to go on top the sweet potatoes as well.

These are good, but I would recommend reverse the process, boil the potatoes in stock first, then sear it, so is crispy outside, soft inside, and really flavorful

Out of all the ways I've eaten potatoes over the years, fondant potatoes are easily my favorite alongside Joël Robuchon's special extremely butter-loaded potato puré on La Ratte potatoes.

Make potato chips in the microwave


Recipe: cut potatoes in to thin slices and then put salt and pepper and other optional toppings then put it in the microwave for 7 minutes
