The difference is when you deep fry the oil has to be much hotter, so it Cooks a lot faster so you don't get it as tender in the middle because while it is baking, it is also partially cooking

For anyone who doesn't already roast their potatoes this way (par boil, seasoned oil) - start doing it. They're sooo much better.
