Will the real shrimp scampi please stand up?
EDIT: I said "Langostino" in the video, but just learned Langoustine is the actual translation for "Scampi." Apologies for the mix up.
I’m not sure who first coined the phrase “Shrimp Scampi,” but they probably didn’t speak Italian (or English). Nevertheless, it has become a super popular and delicious dish because it is so easy to cook and requires a couple basic ingredients. To be honest, I prefer the simpler, classically Americano version with just shrimp, but it was fun seeing what a dish that was 100% true to the name “Shrimp Scampi” would taste like. And while I was already eating a dish with multiple types of seafood, I figured why not just add some caviar too.
You can make this with or without the langostino and caviar and it will be a delicious and easy weeknight meal.
Ingredients:
2 Servings of Pasta
¼ c Butter
4 Cloves Garlic
Crushed Red Pepper (To Taste)
½ c White Wine
8-10 Shrimp
8-10 Langoustine Tails
Chopped Parsley
Lemon Juice
Caviar (Optional)
Recipe:
-After starting to boil your pasta, melt ¼ c of Butter on low, then add 4 Cloves of Garlic and crushed red pepper.
-As soon as you can smell the garlic, add ½ c white wine to stop the cooking process and let that simmer for 2-3 minutes.
-Add your shrimp and cook for about 2 minutes before flipping and cooking for another minute. If you’re langoustine tails aren’t pre-cooked, add them with the shrimp here too.
-If you’re langoustine tails are pre-cooked and frozen, then add them when the shrimp are almost done.
-Add the al dente pasta to the pan with the meat, and toss vigorously with the parsley and a splash of leftover pasta water.
-Garnish with some fresh squeezed lemon juice and optional caviar… if you’re feeling fancy.
