Linguine with Shrimp Scampi

Ingredients

Vegetable oil
1 tablespoon kosher salt plus 1 1/2 teaspoons
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes

Directions

Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.

Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.

When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

I make this for my six-year old; he calls it “hot noodles, and he loves it. I also add a little minced shallot and white wine before I toss in the shrimp. Yum!!

Oiling the pasta water makes the pasta slippery. You want the sauce to stick to the pasta. Therefore, it's good practice to not add oil to the pasta water. It makes a huge difference.

I made this and it was so Definitely a keeper! I added asparagus for some crunchiness. It worked really well with the pasta. The recipe is so simple and easy to make and so delicious. Thank you Ina!

My daughter's & I love Ina. Watched her for years. Imagine sitting with a 6-7 & 10 year old & still today & they're both now in their 20's. Was told by an Italian lady, NEVER NEVER add oil to pasta water!! No need. Just watch and stir. You want the sauces to stick to your pasta. Oiling the pasta in the water makes sauces slide off, not stick.

Being cento percento Italian myself, I know Ina shouldn’t add evoo to the pasta water or the red pepper flakes at the end BUT she really is an excellent chef and can cook for me anytime anywhere anyplace and I would feel as if I were in heaven.

Ina, l love your videos and used to watch your show all the time... But, I have always been taught if you use a large enough pot and enough water (Salted of course) there is no need to add oil. Adding oil to the past water prevents the sauce from sticking. Your Shrimp Scampi looks delicious and of course I love your roasted chickens! 👍🏼👏🏼👏🏼👏🏼👏🏼

Oh Ina, you started a big kerfuffle by adding oil to the pasta water, lol. Others here have mentioned adding shallots and a quick white wine reduction, which would be wonderful. I would also suggest adding a couple of tablespoons of reserved pasta water to finish off the dressing of the pasta. I agree it would be nice to see the finished plated dishes as well.
