He makes his stuff legit. I'm Napoli/Sicilian roots, N.African Muslims ruled the area for 300 years they introduced Couscous to our country. And now southern Italians have been eating ever since. We all connected at of day.

Oh, what memories! I was au pair to a French Algerian family in Paris in the 1960's. This was made at least once a week. Delicious! This is the first time I have come across an authentic recipe. The instant kind remind me of boiled chicken feed that my grandmother fed her hens - yuk! - terrible smell! Thanks for the memory. I shall try to find a shop that sells the real grains and have a go at cooking them. 🙂👍

You can't buy non-instant couscous from a grocery store. You can, however, buy the ingredients to make it. Traditional couscous is made from semolina flour which is moistened with a little water and rolled by hand until little balls are formed. You can find recipes that detail the rolling technique by entering "Hand-rolled couscous" into your preferred search engine.

Thanks for the recipe. I've seen many recipes in various languages, and some are good and others are just a waste of time. Chef Mourad's recipe is by far the best I've watched so far, and it's work with my theory that the couscous must have some flavor in it. I stopped eating couscous even in high end hotels in Manhattan and other places because each and every time I taste it, it taste so bland and flavorless. Some may say: well it'll get its flavor from the food that you'll add on top... and I am telling you all. It Is Not The Same as when you already incorporate flavor to begin with! In short Chef Mourad really knows what he is doing and thanks to Williams-Sonoma and Chef Mourad for bringing us a great recipe and not just more mediocre recipe. One thing I will suggest, it is to add the written recipes on your videos at the bottom where you have your websites and the other information is showing. So it will be complete video!

I really like that couscous cooker; it's beautiful.
I'm sure couscous is wonderful prepared this way, but it takes too much time and work. I'll just stick to my prepared version and treat myself to the real stuff at my local Middle Eastern restaurant. Thanks though; I really do appreciate seeing how it's done.

Very nice and traditional way. Well done👍👍. I remember that in Israel some grandmothers are making it overnight and it is fascinating.

In Morocco, especially in rural berber arias, moroccan women still make the couscous traditionally like their ancestors did while creating it, they don't buy it from the shops 🇲🇦🇲🇦🇲🇦😍

Why did I have to wait 67 years to learn this? The truth is I've been learning many, many different foods, ways to prepare and cook dishes since my retirement.
