I made the Butternut Squash & Sage Risotto. I am thrilled that I didn't have to sit over the risotto as in the recipes of old. I used chicken broth and shallots as that was in my pantry. The chopped squash at the grocery was all I could find. This dish is so delicious and also a delicate in flavor. My husband isn't a rice lover but he said it was very good. (for him it won't surpass meat and potatoes though) Thank you Lynn for creating great recipes.

Oh my god, I love risotto! My dad makes an awesome instant pot sausage risotto with sundried tomatoes and spinach and it's one of my FAVOURITE meals.

Yesterday I did the one with green vegetables and goat cheese. OMG how tasty it is! My 2 years old son devoured his portion in 3 minutes, what a brilliant idea to add a goat cheese, it made this dish sooo delicious, and the good thing is that I could use green part of the leeks and asparagus ends in my vegetable broth instead of just throwing them. Thank you Sara Lynn!
