I love his suggestion of using a grater to prepare the onion and garlic. Some chefs insist on you using a knife to do it and, if you can't, you feel like an idiot.
I love how much Marco has grown from being Rockstar Chef to a Sage. He meets the people where they are. The point is having the onion and garlic fine enough to essentially dissolve into the dish. He doesn't care how you get these as long as it gets there.

As an Italian and a Milanese, I thank you for spreading the word about real Italian cuisine in Australia. Now when all these guys go to a fake Italian restaurant they will understand the huge difference with the original!!! Thank you Thank you

One of my careers for quite a few years was executive chef... Catered an event and several of the (Event) chefs were shaking in their boots as they thought I was Chef Marco, same hair, same look, very similar cooking and kitchen style.

And a timid commis chef came to me and said Chef Marco, "we are wondering", I winked at him and said ah the gig's up, and he did not understand. Had to stop the service for a moment and take them all to dash their hopes of working with the Great Marco Pierre White.

They took it well and then I simply said stations, let's go. They responded and what a great service we had! Amazing event. Met Chef Marco once 25 years ago and inspired me then as he does now. I am not Marco Pierre White. I bow to the master.
