Teriyaki Chicken Garlic Butter Udon

Here’s the recipe

Ingredients -

Chicken & Seasoning - 

1 Tbsp (20ml) - Olive Oil 
4 - Large Chicken Thighs, Boneless
1 tsp (4g) - Onion Powder 
1 tsp (4g) - Sweet Paprika 
1/2 tsp (0.5g) - Red Chilli Flakes 
Salt & Pepper 

Teriyaki Sauce - 

1/4 Cup - Soy Sauce 
1 Tbsp (20ml) - Rice Vinegar 
1 Tbsp (20ml) - Mirin 
3 - Garlic Cloves, Peeled & Grated 
5g (0.2oz) - Ginger, Peeled & Grated 
2 Tbsp (40g) - Brown Sugar 
Ground White Pepper 
1 tsp - Corn Flour 
1 Tbsp (20ml) - Cold Water 

Garlic Butter Noodles -

400g (14oz) - Udon, Hokkien, Singapore Noodles (Pasta can be used)
3 Tbsp (42g) - Unsalted Butter 
6 - Garlic Cloves, Grated 
2 1/2 Tbsp (50ml) - Low Sodium Soy Sauce 
1 Tbsp (20g) - Oyster Sauce 
1/3 Cup (80ml) - Thickened Cream (Whipping Cream)
Parmigiana Reggiano, Grated 
Salt & Pepper 

Garnish - 

Spring Onion (Scallion), Thinly Sliced 
Toasted Black & White Sesame Seeds 

Method - 

In a bowl, add the chicken thigh, onion powder, sweet paprika, chilli flakes, salt, ground white pepper, and olive oil. Mix to combine and set aside. 

Add the teriyaki sauce ingredients to a second bowl and whisk to combine. 

Place a pan over medium-high, add 1 tbsp olive oil, and sear the chicken for 3-4 minutes on each side. Remove and set aside. Pour in the teriyaki sauce and bring to a boil. Reduce heat to low and simmer for 2-3 minutes until thick. 

Add the seared chicken and resting juices into the pan and cook for 2 minutes or until well coated. Set aside. 

In a new pan over medium-high heat, add the butter and allow it to melt. Add the garlic and cook for 1 minute or until it starts to brown. Pour in soy sauce, oyster sauce, thickened cream, grated Parmigiana cheese, and ground white pepper. Mix to combine and cook for 2-3 minutes or until thick. 

Add in pre-cooked udon noodles and mix until hot. Remove from stovetop. 

Slice the teriyaki chicken and serve it on the garlic butter udon noodles. Garnish with black and white sesame seeds and spring onion (scallion). Dig in.
