🍆 Saturday steaks Ep4, Aubergine with Labneh. A take on my @masterchefuk Chef Table Dish.

The “Steak”:
- 2 thick slices of Aubergine
- 1 clove of garlic
- a sprig of thyme &/or rosemary
- 1 chilli
- 50g balsamic vinegar
- 50g red wine vinegar

- Coat your Aubergine steaks in oil before frying on a high heat until golden brown on both sides.
- Season well with salt and pepper before adding your garlic, chilli and herbs. Now baste until your cheffy heart’s content.
- De-glaze the pan with both vinegars and a splash of water then continue to cook until the vinegar is thick, glossy and coating the steaks.

The Aubergine-
Ingredients-
-2 Aubergine.
-150g olive oil.
-1 onion.
-2 cloves of garlic.
-2 Tomatoes.
-100g Golden raisins.
-3g cumin powder.
-3g coriander powder.
-2g cinnamon powder.
-1 Lemon.
-1 Red Chilli.
-50g Coriander.

Method-
-prick and then bake your aubergines in 180° oven for 30 minutes.
-in a separate medium size pan on a medium high heat sweat down your onions, garlic, tomatoes, chopped golden raisins and spices until thick and soft.
-once your aubergines are baked take out of the oven wrapping clingfilm to rest for 15 to 20 minutes, cut your aubergines in half scrape out the flesh and mix in with your onion mix.
-Slice your chilli, chop your coriander, zest and juice your lemon, season to perfection and serve.

The Labneh-
Ingredients-
-100g Tahini.
-50g water.
-25g white vinegar.
-1 lemon.
- Flaked salt & pepper.
-50g coconut yogurt.

Method-
-Place your tahini into a metal bowl & whisk in the rest of your ingredients zest and juice the lemon and season then serve.
