I just discovered you a few days ago, and have been binge-watching your videos and have ordered both of your books. I love that you are a true scientist and that you have such a depth of knowledge from which you share. You have a wonderful way of explaining with analogies that really sticks with me and helps me understand more deeply. I am more grateful than you know for all that you have done.

After planting a permaculture setup on my 1 acre, I found that this has led to many other endeavors such as canning, freeze-drying, wine making, and herbalism to name just a few. I grow a lot of my own fruits and vegetables, including strawberries, and I have enough to freeze to get me through the winter. I also have 40 blueberry bushes, 50 asparagus crowns, a boatload of wine cap mushrooms, Concord grapes, pears, apples, kiwis, persimmons...on and on! Along with all of the food crops, I also have a number of herbal plants like mint, chamomile, and calendula. I would love to hear your take on herbalism and the plants in this category used as medicine. For example, I take Hawthorn for my heart health, and it has allowed me to cut one of my medicines in half, with my doctor's blessing, because it really made a difference in my blood pressure.

I like the fruit tossed together with cottage cheese for breakfast along with a few cups of coffee. I used to have yogurt, but I've found that I like the CC so much more. From a health perspective, how does cottage cheese compare to yogurt? I do get the "whole" variety rather than the low fat, because a doctor once told me that it was better. I had been keto, because it was the only thing that allowed me to lose weight, but I found I missed fruit (other than just berries) too much. I, for the most part, avoid "white" foods like flour, sugar, potatoes...I do use stevia drops because I do like sweetness, but am pre-diabetic, so I don't really use honey or maple syrup either, which seems criminal, being I live in Vermont! When I used to have sugar, it made me hurt. It felt like the sugar crystals were slicing paper cuts throughout my insides, but also there was always a dull aching throughout my body. It made me tired and it made me crave more and more. Since I've cut it out, all of that is gone. The natural sugars in fruit do not act the same way in my system. I'm wondering if honey or maple syrup would. I have a doctor's appointment coming up next week, and I'll be curious to see what my number is for my A1c. Daily, I've been having quite a few bunches of Concord grapes over the past month or so. They are so sweet and delicious that I've canned over a dozen quarts of the juice to get me through the winter.
