Tasty Cucumber Salad 🥗

The Asian marinated cucumber is so tasty and so simple! It makes a great side dish, or an addition to your salad. You can make a big batch in advance. Use Persian or English cucumbers for this recipe for their extra crunch. I use Korean red chili flakes here because they are seedless so you get the smoky peppery flavor with less heat. You can also use red chili flakes, use less to reduce the heat.

Persian or English Cucumber 1 lb
Salt 1 1/4 tsp
Korean Red Chili Flakes 1 1/2 tsp (or Red Chili Flakes 1 tsp)
Scallion (chopped) 1 stalk
Garlic (minced) 1/2 tsp (3-4 cloves)
White Vinegar 2 tsp
Maple Syrup 2 tsp
Sesame Oil 2 tsp
Sesame Seeds 1 tsp

1. Cut off the ends of the cucumbers. Slice them into 1/8" (3 mm) thickness.

2. Mix salt with the sliced cucumbers and let sit for 20 minutes. The salt will draw out the water in the cucumber, discard the water.

3. Mix in red chili flakes, chopped scallion, minced garlic, white vinegar, maple syrup, sesame oil and sesame seeds with the sliced cucumber. They are ready to be served, or wait for 15 minutes or overnight to let the cucumbers marinate some more!
