One important thing that we missed that separates supermarket coffee from specialty coffee is "Roast Date". Supermarket coffee will only tell you 'Best Before' where as a bag of specialty coffee will tell you the roast date so you really know how fresh it is. Now there is such a thing as too fresh -- while roasting there is a build up of CO2 and this can get in the way of extraction. So ideally you'd wait a few days to a week off the roast day to allow the CO2 level to drop so you can extract all of the goodness that the beans have to offer.
