MARSHMALLOW RECIPE ►
21 grams unflavored gelatin (3 packs) I use knox gelatin powder, you can use agar agar to make them vegan but it won't have the same texture.
4 ounces (1/2 cup) (113 g) cold water (for the gelatin)
6 ounces (3/4 cup) (170 g) corn syrup (or honey, golden syrup or maple syrup)
2 ounces (1/4 cup) (56 g) honey (or corn syrup)
12 ounces (2 cups) (340 g) granulated sugar
4 ounces (1/2 cup) (113 g) water (for the sugar syrup)
1/4 teaspoon salt
1 whole vanilla bean or 2 teaspoons vanilla extract
4 ounces (1/2 cup) (113 g) canola oil (for brushing utensils)
4 ounces (1/4 cup) (113 g) powdered sugar (for dusting)

My family has been in the candy business for nearly 100 years. You can stir the batch and much as you want, it will not turn to sugar. You much wash the sides of the pot down with hot water periodically however.

Generally after the sugar has dissolved we generally don't stir it because there is no need.

I have been making marshmallows for many years. (Over 40 years!) The only difference is that the recipe I use does not use the corn syrup. Summertime the stores used to come out with toasted coconut coated marshmallows. So, I toast coconut and roll mine in that. It is a winner! Nothing compares to the homemade marshmallow. (My recipe came from the "Farm Journal Homemade Candy Cookbook". I hope everyone tries them.

It's actually surprising how easy marshmallows are to make at home - I made them one year as a gift when I was on a very tight budget and I think it's still probably one of the best-received gifts that I ever gave to people.

Edit: It always puzzles me to see comments where people expressing surprise/horror about how much sugar is involved in making candy. I'm honestly not sure what some people think candy is made from! LOL

Love making homemade marshmallows. I offer them thru my business, Kathy's Kernels. I use a large pizza cutter to cut the length of the marshmallows. Then I use scissors to cut each individual square. I also roll then in powder sugar and put 2 at a time in a sieve and shake the excess sugar off. Works like a charm. Thanks for the video!

Thank you so much. I've just watched what feels like 700 videos on marshmallows and finally someone said how long it takes for gelatine to "bloom".
Plus you're style is very watchable. Unlike some who seem to go for the "doouchie super bowl voice over I'm way too enthusiastic and need to be slapped" voice lol

Love how you explained about the the water needing to evaporate before the temp can rise.

Just tried your recipe! Amazing! I added matcha powder to my gelatin mixture and the flavour/texture of these marshmallows is insanely good!!!! I used maple syrup instead of honey and didn't add vanilla so the matcha flavour really stands out

Made these yesterday as I wanted to use some to decorate a S’mores cake I am making. I cut them this morning and they came out PERFECT even though I didn’t have someone to help me getting into the pan! I didn’t change a thing. Instructions were perfect. Thank you for another great recipe!!!

Love how you explain what you do and why you do it. Makes a click happen upstairs that I wouldn’t of made myself without your explanation. Lol. Usually in Recipes, I do what they say but don’t know why I do so it’s a good change! Super interesting also!

I just made marshmallows and it's true: They disappear in your mouth and they taste AMAZING. I actually made them for my kids, sorta like a project. I don't like marshmallows at all, at least the store bought ones. But THESE marshmallows are DE 👏🏼LI 👏🏼CIOUS lol. Despite the sugar, corn syrup and honey (I used maple) you can hardly taste it because it just melts in your mouth. Thank you Liz, for another winner recipe ❤️🙏🏼

My kids asking this morning how are marshmallows made while sipping on their hot cocoa, so here we are. This was such a great video for my kiddoes. I knew in the first 1 or 2 minutes that you went to culinary school. Bench scrapers are simply the best, I use them a lot. I love the make-up brush idea and will definitely be adding that to my chefs bag. 👏🏻👏🏻. So we subscribed to your channel and are looking forward to watching all the good things you make.

I have made homemade marshmallows for years now. My recipe came from an old "Farm Journal" cookbook. There is no comparison to store bought marshmallows. I rolled mine in toasted coconut. Much better than the ones in the stores. Hope you all try them.

Love your presentation. I appreciate you explaining the "why" of the process. I can hardly wait to make a batch of mint marshmallows to dump in hot cocoa! :-)

I have now made this recipe using golden syrup as suggested instead of glycerin and wow they are gorgeous. We melted them on a stick over a burner and put them on a shortbread cookie with chocolate, they were lovely.

Now, that I am a Grandmother, l no longer make Marshmallows... I make “Nanny-Mellows”. They were officially renamed by my eldest Grandchild back in 2008 when he was six. I have tinted my Mellows, used all kinds of extracts... l have even cut them with metal cookie cutters. It’s not easy cutting out Star shaped Mellows! 🤦🏻‍♀️ l also love to dip them in Dark Chocolate. (It’s easier if you only dip 2/3 of your Mellow into the chocolate.)

I’ve been “Binge” watching your videos for a couple of hours now and you had me in stitches with this one. Thank You from the bottom of my heart! ♥️
