It was simply more than just a broken bone. In the PoA (book), Sirius (Dog) badly mangles Ron's Leg and Prof Lupin simply conjures bandages with "Ferula". It is possible that Ron's injured Leg was a lot more Serious than it looked. Also, just bcoz madam Pomfrey says that she can heal broken bones in a second doesn't mean that she can actually do it that fast.

After administering the required potions, Madame Pomfrey had the students rest in the Hospital Wing for some time before discharging them.

Also, in the Prisoner of Azkaban (book), when Harry suffers a nasty fall due to an encounter with a Dementor, he is admitted to the Hospital Wing wherein Madame Pomfrey makes him rest there for quite some time before discharging him.

It's a deep cut not a broken bone also she's told to leave for dumbledore so she might have had to leave before she could do anything
Ron also had lots of emotional trauma he needed to work through so she could have just been giving him time to heal mentally before physical healing it was also probably infected so like Cedric's burn took longer than a second in book/movie 4 it proba my was the infection aswell 😊

I think she was told by dumbledor that Ron had been depressed by the loss of scabbers so she kept a Muggle cast on the leg so he gets time to cope with the tragedy

But the thing is Ron's leg wasn't broken. It was bitten by Sirius while he was a dog, which meant that he probably had torn tendons or ligaments, and the cast is there to immobilize that's why he has a cast on. She's never mentioned how fast she can heal ligaments and tendons.
