There are so many wonderful keto cookie recipes online that I think I'd make a batch of keto shortbread cookie dough, spread it out thin in the same pan the cheesecake would go into, partially bake the crust first--the dough is too soft to just pour the filling on top of, and would collapse, I think. Bake the cheesecake for the time it needs, and the whole thing should work very well. I'll have to try that.
