Growing up in an Italian household, giving up pasta after 57 years of it being a lifestyle was difficult. Rice and fruit being a major part of the Italian cuisine was a gut punch. But I've never felt physically better since going on LCHF diet.

I just skip the pasta and make baked meatballs with a tiny bit of sauce covered with mozzarella cheese and fresh parmigiana cheese
Delicious and satisfying for an Italian meal

Thanks Doctor, but NONE of these are even close to the real thing. I am a carb addict, and it is easier just to avoid pizza, pasta, rice and all grains completely. After 18 months abstinence from refined carbs, processed grains and franken foods, I am down 140 pounds. Do I miss my pasta and pizza? You bet, but it gets easier every day!

I would normally prepare the Spaghetti Squash or Zucchini the day before to let them dry out a bit, so they are not so watery. It will be closer to pasta .

One of my all time favorite noodle substitute is Palmini noodles made from hearts of palm. They make angel hair, rice, lasagna sheets, and linguini. It is low carb, low calorie and fits into page 4 beautifully.

I have been making Ketogenic Woman's Carnivore Pasta and it's the closest to real pasta that I've ever had. It takes a few minutes to prepare, then 8-10 minutes in the oven. I cut it into spaghetti, fettuccine, and use it as lasagna sheets. I also cut it into small squares to use in chicken "noodle" soup. It's as versatile as can be, and VERY low carb. 😋 The only ingredients are 3 tbs panko, pork, rinds, 4tbs cream cheese, 1tbs parmesan cheese, and one egg! I hope you check it out.

I've tried lots of these substitutions, methods, & recipes to make non-keto foods keto acceptable but frankly it's way more bother than I want to go thru. I do miss the simplicity of the SAD where you could fill a bowl with cereal, pour milk on it, & keep refilling the bowl until the milk is gone. Or just throw noodles in water until done. Those were the days except for the overweight & crappy health.

Amazon sells numerous zoodle spiracle slicers and is very easy to prepare your own at home. That way for those of us who prefer organic zucchini and do that. One never knows what prepared items have or are sourced. I've not consumed pasta, grains and that type of food for years and for me, the sacrifice is worth the effort. Riced cauliflower is also another excellent product.

Sometimes you just need something to which you add sauce without it being "pasta". I use sauteed cabbage with keto beef stroganoff and the combination is wonderful! When you eat keto, I feel you need to get out of the mindset of "replacing" your comfort foods with a close alternative and instead worry about ways to incorporate healthy foods to maximize your nutrition. While shirataki noodles may be low carb, when I check the nutrient composition, there is not much there. Cabbage on the other hand has a host of valuable nutrients for us.

I eventually just went to sliced zucchini, cauliflower, broccoli, or halved Brussels sprouts and put some kind of meaty/cheesy sauce over it. Roasting the cauliflower on a sheet pan is also fantastic. It isn't shaped like a noodle, but they serves fine as a rice or noodle substitute. Rao's marinara is a good low carb tomato base for a sauce if you want to quickly make something.

By the way, sheet pan roasted radishes, or radishes cooked with a roast chicken wind up surprisingly close to potatoes. The cooking removes their sharp taste. I try to limit them, but they are well within keto numbers for a reasonable serving.

Shirataki noodles are great if you like eating something with the texture of rubber bands.

I've always been a squash fan since childhood, so I was pleased when zoodles came out and liked spaghetti squash before it became a thing.

hi i am a japanese in japan. i like shirataki. it’s very traditional food here. usually in sukiyaki meat dish. i remove sugar so it’s a beef shirataki.

The Shirataki are my favorite noodle substitute so far. There's also a rice substitute. The vegetable is also known as Konjac.

My go to for noodle substitutes are long green beans and Zucchini noodles and use low sugar or homemade spaghetti sauce.

Steve from Serious Keto makes a canned chicken pasta which I make regularly since some of the substitutes taste terrible to me.
