High Protein Creamy Chicken Fajita Burritos🌯
Easy Meal Prep With 56g Protein💪🏼

(Macros: Per Burrito - 10 Total)

Ingredients:
1.3KG Diced Skinless & Boneless Chicken Breast (raw weight)
1/2 Packet Fajita Seasoning (Old El Paso - store bought or homemade)
400g Red Enchilada Sauce (Old El Paso - or tomato passata)
500g Diced Capsicum/Bell Peppers
1 Diced Onion
Light Cooking Oil Spray (Frylight)
Salt
Parsley
600g Low Fat Cottage Cheese
130g Light Cream Cheese (or light laughing cow cheese)
1/2 Packet Fajita Seasoning
80g Light Mozzarella
700g Cooked White Rice (divided into 10 burritos - 70g per burrito. You can add more or less depending on your macros)
10 Warm Regular Tortillas (Old El Paso, Simson's Pantry Protein Wraps or any large basic tortilla)

IMPORTANT NOTES:
Before rolling the burrito make sure to warm up the tortilla in a pan with the stove on low heat for approximately 30 seconds on each side. Doing this will prevent the tortilla from breaking when rolling.

Reheat Instructions:
Store your burritos in the freezer & when you’re ready to heat it up first take it out of the foil/wrapper, wrap it in a paper towel & microwave for approximately 2 minutes (this will thaw the burrito to ensure it isn’t cold in the middle) from here air fry at 190C/375 for 5 - 8 minutes. This can also be done in the oven or pan fried, times may vary slightly.

My Mexican/orange rice recipe for anyone that doesn't want white rice:

- 1 cup of enriched long grain rice
- 2 cups of hot water
- 1 tbs of corn oil
- 3 1/2 tsp of chicken bouillon (preferably Knorr)
- 1/2 tsp of tomato bouillon (preferably Knorr)
- 1/2 tsp of salt (preferably sodium free salt)
- 1/4 tsp of onion powder
- 1/4 tsp of garlic powder
- 1/4 tsp of black pepper

1. On medium low heat, pour corn oil in a small pot with a lid. Use a wooden spoon preferably to cook with and to check if the oil is ready. Place wooden spoon in the oil, if you see the bubbles, the oil is hot and ready.

2. Dump the rice in the oil and stir it around. Keep the heat at a lower setting to not burn the rice. Keep stirring until you see the rice start changing color.

3. Dump the spices into the pot and mix in thoroughly.

4. Pour the hot water into the pot and place the lid on it and let it sit at the LOWEST setting for 20 minutes. (If you use cold water, let it sit for 35 minutes.) DO NOT remove lid until the very end.

5. Enjoy! :)

For a lower amount of carbs you can possibly use cauliflower rice and Ole extreme wellness wraps. The wraps have 13 grams of carbs and the rice has 4 per serving, so each burrito should have around 20-30+ grams of carbs if made like this.

We did this and just finished off the last of the burritos today. Very good. I might sacrifice and add a second pack of seasoning next time, as it was there but not very strong. It doesnt add much but will add a lot. That aside.. Fantastic recipe. Loved it.

You can use a neutral oil and put it in a spray bottle as well, vs spray can oil, you'll get more control over how it tastes and you'll still be reducing the amount drastically over pouring oil over it or cooking directly in oil.

Just made these! Recipe works but I'd say there's a blandness to it that needs some additions. If you're gonna make these you should double your fajita seasoning and for the true fajita experience add some spicy components to give it a little kick. Right now it's white guy mexican food haha, still really good and high protein though so can't knock it too much.
