I’ve never eaten clean on Cinco de Mayo, but today is a new day! This chicken burrito bowl with a jalapeño cilantro sauce was absolutely delicious 🤤 🥗
Ingredients for the Chicken:
2-3 Boneless Skinless Chicken Breasts (about ½ inch thick)
5 Tbsp Extra Virgin Olive Oil
1 Tbsp Lime Zest (from two limes, save the limes for the green sauce)
5 Garlic Cloves (minced)
1¼ Tsp Ancho Chili Powder
½ Tsp Ground Coriander
¼ Tsp Dried Oregano
1¼ Tsp Salt
½ Tsp Ground Black Pepper
Jalapeño Cilantro Sauce:
1 Jalapeño (seeded or unseeded and roughly chopped)
1 cup Fresh Cilantro (chopped)
3 Garlic Cloves (minced)
½ cup Mayonnaise
¼ cup Sour Cream
1 Tbsp Fresh Lime Juice (from 1 lime)
2 Tbsp Extra Virgin Olive Oil
½ Tsp Salt
½ Tsp Ground Black Pepper
Instructions for the Chicken:
In a large bowl, add the chicken breast and all of the ingredients for the chicken, and mix the ingredients into the chicken until incorporated. You can use it right away, but for the best results, let it marinate for at least 4 hours or overnight.
On medium-high heat, using a cast-iron skillet or skillet of choice, lay the chicken down in the skillet and cook on each side for roughly 2-3 minutes or until the internal temperature reaches 165 degrees Fahrenheit. Remove chicken from the skillet and slice into strips.
Instructions for the Jalapeño Cilantro Sauce:
Combine all of the ingredients in a blender or food processor and blend into a smooth sauce. Taste and adjust with salt and pepper.
Serve With:
Tomatoes, avocado, cucumbers, beans, cilantro About 2 cups of cooked cauliflower rice, quinoa, or basmati rice
