Chilli Mussels | Perfect Dish For Both Summer And Winter

1kg mussels, cleaned and beards removed
1 medium onion, diced 1cm
3 cloves garlic, chopped
3 birds eye chilli, chopped
800g canned tomato
½ cup dry white wine
2 tbs parsley, chopped
2 tbs tomato paste
½ tsp black pepper
3 tbs olive oil

Heat olive oil in a large pan or wok and sauté onion until it starts to turn translucent.
Add garlic and chilli and stir fry for another 1 min.
Add tomato paste and canned tomato and stir through.
Add white wine and black pepper and stir through.
Bring to a boil then cover and simmer for 10 mins.
Add mussels, stir through, then cover and cook for another 5-8 mins.
Check after 5 mins. Once most of the mussels have opened, it should be ready to serve.
Top with parsley and stir through once more before serving.

Did you put the mussels in hot water before putting it in the sauce pan
