I was Vegan for several years, recently I've added eggs back in to my diet :) I eat 4 eggs every other night (mostly), on workout days. So having to peel 4 soft boiled eggs before I can add them to my salad and eat them, cam be annoying, especially sometimes, as some eggs can be hard to peel. So, I have found the best way is to poach but in very small glass bowls in a pan of gently simmering water, it works so well, so easy!
