Cottage cheese makes this alfredo pasta super creamy and rich, without all the usual calories. Our cottage cheese alfredo pasta will surely please the whole family. What’s more… it’s super fast and easy to whip up, perfect for a delicious no fuss midweek meal.

Recipe Ingredients

For The Alfredo Sauce
- ½ cup Anchor Cottage Cheese
- ½ cup Mainland Parmesan
- 1 cup Anchor Milk
- 1 tbsp Cornstarch
- ¼ tsp Mrs Rogers Iodised Sea Salt
- ¼ tsp ground pepper
- 1 clove garlic
- A handful of Superb Herb Parsley, roughly chopped

For The Pasta
- 1 pack Diamond Fettuccine Pasta
- 3-4 litre Boiling water
- 1-2 tsp Mrs Rogers Iodised Sea Salt
- Splash of Olivado Extra Virgin Olive Oil

We used a Le Creuset Stainless Steel pan to cook the pasta and  Le Creuset Marmite Signature  to finish off the dish.

Cooking Method
1. Cook pasta as per packet instructions until firm to the touch. Drain and set aside.
2. Place cottage cheese, parmesan, milk, cornstarch, salt, pepper, parsley & garlic to a food processor and process until smooth.
3. Pour pasta sauce into a sauce pan and simmer for 5 minutes. Stir and season to taste with salt and pepper.
4. Add the cooked pasta to the sauce. Sprinkle with more fresh parsley. Spoon into bowls & devour.

I love this idea, so the cottage cheese mix acts as a cheese sauce! Thank you very much, now that the warmer weather is upon us, I was thinking of a recipe similar to macaroni cheese to do.... this will do nicely.... and it's easier and quicker... no slaving over a hot oven.

I'm going to make this tomorrow to pair with salmon (or chicken and shrimp), but I will probably add cream cheese to the sauce just to give it a little extra body. Never made this before so I dont know that it needs it, but it wouldn't hurt either way! Also going to toss in mushrooms and onions with a side of greenbeans since I don't have spinach at the moment.

NEVER ADD OIL TO THE WATER TO COOK PASTA! YOU PREVENT THE STARCH AND THE SAUSE WILL NOT STICK! And before anyone slams me I am a professional cook!
