For one pot = 6 servings(I make two of these per week)
- 400g celery
- 500g carrot
- 350g zucchini
- 380g onion
- 700g tomato
- 400g beef or meat substitute
- 2 cups broth
- 2 tbsp rice vinegar

To taste
-oregano
-parsley
-Parmesan
- chili flake
- garlic powder

if you wanna truly hide the veggies, roast the veggies and then purree them before adding them to the sauce, works very well for people with food texture issues or children. ❤

My teenager found this short and wanted to make this and man am I glad we did! The whole family wants to make it again right away. :) Here's the recipe we extrapolated from this vid:


400g celery (3-4 medium stalks)
500g carrot (4-5 medium)
350g zucchini (2 medium)
380g onion (1 large)
700g tomato (4 large, or canned diced or sauce)
400g beef or meat substitute (we used 16 oz)
2 cups broth
2 tbsp rice vinegar
1/2 Tbsp salt

1 1/2 Tbsp garlic powder
1 Tbsp oregano
2 Tbsp parsley
1/2 cup heavy cream
1 cup freshly shredded Parmesan

1. Mince veggies with food processor (or chop by hand)
2. Sauté veggies in large pot, with some oil
3. Add the ground beef, cook until browned
4. Add tomatoes, seasoning, broth & vinegar
5. Add cream & parmesan
6. Simmer for 2 hours
7. Serve over pasta of choice
(We simmered for 30 mins, then added the pasta & cooked until pasta was ready)

I also recommend swapping half the beef for finely processed mushrooms. Works for any ground beef recipe.

if you don't want the veggie texture, you can just blend the veggies after sautéing them, brown your beef, then add it back in.
