Nothing like an amazing quesadilla to get your belly full! Today I wanted to take things to the next level by cooking something that sounds insane. A japanese A5 wagyu quesadilla. But I am not using what you would normally think of A5 wagy steak, it is something I never had before and I can't wait to share it with you.

I know it's a cooking channel, but my favorite part is enjoying the family interactions. Maumau is his cousin; Angel is his nephew... They just seem to be such a big, loving family. I love it!

That method for cooking the quesadilla is absolutely genius, over stuffing them with cheese and using the oil to base..

Pre heat the tortilla in the pan with oil until warm on both sides, then remove and add cheese to the pan, add cooked meat cover with tortilla, flip, fold, flip again. In central Mexico we use both flour or corn tortillas, but flour ones are usually used more in the north. We also use asadero or oaxaca cheese. You should try it with corn tortillas, we call them quesatacos or quesadilla con carne. Good stuff.

Pre-grated cheese usually has an anti-caking agent coating it. That keeps it from clumping into a solid mass in the bag and improves shelf stability. This is why it doesn’t melt as well as freshly grated cheese.
