You don't need the subsurf and bevel to get the smooth shade, just activate "auto smooth" under normals in the mesh data properties tab.

I like how at around 2:08 you went from "step by step" to "timelapse hope you can keep up and didn't have any weird issues when you try to copy this part."

5:31 No, it is not the missing geometry, it is the normals. Go to the Mesh properties (green triangle pointing downwards ) Under „Normals“ you will find „Auto Smooth“ turn that on.

Normals are bit more intricate but when you shade smooth the normals will be averaged between adjacent faces. Auto smooth will prevent that averaging for adjacent faces when the angle between the two is higher than the value next to „auto smooth“ (hard to explain in text)

the shortcut for grid fill is ctrl+F, another tip is after apply shader smooth you can go to Object Data Propeties (green triangle) > Normals > Auto Smooth, this will normalize automatically the normals withou need of the subdivision modifier

Recently I found out that I use these most of all in addition to your's 5:
6) alt+e - to Extrude along normals
7) i - to Inset Faces
8) Symmetrize (mesh-> Symmetrize rather than or in addition to mirror modifier)
9) Bridge Edge Loop (always in a quickmenu as well as grid fill tool)
10) Solidify modifier
11) j - to Connect Vertex Path
12) k - to Knife tool.
and less or completely don't use subdivision modifier.
barely or limited use spin and shear tools

I'd say there are actually 11 of them. Move, rotate, scale, spin, extrude, inset, bevel, loop cut, knife, snap... to..., merge.

And two great addons you get directly with Blender itself - pie menu to speed everything up and loop tools.

Why waste polys on Bevelling everything? Just use Edge Crease + the Subsurf "Use Crease" toggle and boom, clean edges, no extra geometry.

Oh by the way, you don't need to hit ESC after extruding, you can just do "E" "S" right away, it'll work the same, and same with rotation and location

Booleans are pretty important as well. I also use auto smooth in the object data properties menu, instead of sub-surf/beveling edges -- unless I really need the extra geometry, or the auto smooth doesn't do exactly what I want. I enjoy videos like this because it never hurts to go over the fundamentals, and I like bite-sized tutorials.
