Before I watched the tutorial and the method used, I quickly tried to model the main shape by myself.
I came up with the same workflow, but instead of leaving the circles number of vertices at 32 I lowered it to 10, then I build the surface with subD in mind. I used insets to get a circular edge flow on the circular surface, a grid is not optimal here.
I am not an SubD cultist but this shape in particular is perfect for SubD modelling. It's faster and easier to do and more controllable.

Your tutorial very handy for exploring techniques. *But* . In this particular case... 2 neighbouring octagonal cylinders, flat face to flat face, tops and bottoms inset and punched through with Bridge Edge Loops for the holes, one rotated through 90. Bridge Edge Loops again (Blend Surface) between neighbouring flat faces, with a couple of cuts. Bevel. SubD. *All done* . No add-ons. No Booleans. No repairs. Nicely flowing topology. 🥸

Whenever I start to think that I'm finally getting good at Blender, I just watch one of Ponte's tutorials like this one and it makes me feel like an idiot at the beginning all over again. My biggest setback atm is that while I have the HardOps and Boxcutter add-ons, I really don't know how to take full advantage of them. Ponte uses them effectively and it really dramatically speeds up the workflow and generates superior results. That's where I think I want to get to.

Symmetrise just isn't working properly for some reason... Despite joining the objects, its just looping around itself or doing something weird. Was there a step to change the origin point that was left out in the tutorial?

how do you preserve the supporting edges running through the middle when you mirror? whenever i mirror i removes them
