Veganuary - day 9: Crispy Rice Paper Spring Rolls (Chả giò)

This is day 9 of Veganuary. This month, I will share my vegan (mostly) Vietnamese recipes and show you how vegan food is simply delicious food.

As a child, I used wheat-based wrappers for fried spring rolls, since they were a little quicker to work with and developed a nice golden brown color as they cooked. Now that I'm older, I realize I prefer rice paper. It just tastes better. When you brush the outer layer of rice paper with cornstarch slurry, it becomes extra crispy and chewy. For the filling, the ingredients and flavors are typical of Vietnamese fried spring rolls but feel free to adjust the filling to your liking or what is available to you.

Real recipe should be very crispy egg roll, not thick n chewy
