I am lucky to find this Channel . I used wine in my cooking my beef and chicken regularly . In the supermarket I stay for an hour clueless as to which brand to buy. 😢

@5:22 that's a potentially EXPENSIVE bottle of wine to cook with! The Louis M. Martini Cab Sauv is no joke and seriously good. We were wine club members with them for a few years and the quality is stupendous.

Thank you for making this video, Adam.
I used to cook with the same wine I opened for drinking with that meal. I didn't know that cooking zapped the flavor out of it.
Unfortunately, my Diabetes is such that I can't even cook with wine anymore, & cooking with broth just doesn't cut it. I love the idea of the Verjuice. I'm going to get some.

However, you left out salted, yes, I said salted, Shaoxing. The salt in rice wine is added as a preservative.

The Loh family prepared some shrimp noodle soup for me & it was perfect. I asked for the lowdown on the rice wine & Mrs Loh pulled out a 2/3’rds gallon jug of some super generic Shaosing. Just how long do you think it will take a retired, Chinese American couple, to consume the rest of that bottle?

The process for making Marsala, Madeira & port can vary but the end goal is the same; preservation.

Absolutely true.. I’m glad someone else agrees regular wine is superior to sherry wine. It’s too bad it cannot be bought with food stamps though

In a good french restaurant in oz, i was sent weekly, for a box of dry white, and a red...(brilliant oz invention, should see the shipping container sized one for export, lol)..seriously though, oz wine is crazy cheap, (for nefarious reasons, perhaps?).

You didn't cover cooking with both Red and White wine in the same dish. Why not use 50/50 of each?

No - there’s lots of Chinese wines that are drunk in China but need to be salted to be sold as cooking wines in the U.S.

Buddy I have a bachelor's degree in culinary arts and I can tell you, beyond a shadow of a doubt, "cooking wine" isn't ideal by any stretch of the imagination but it can work fine if you know what you're doing. In fact, some may argue that only a great chef could make a quality meal with Holland House lol.
