I like Pepin’s “La Technique” for it’s clear explanations (and photos) explaining how to perform certain procedures in the kitchen. Not so much a “cookbook, ” but very helpful in understanding why things are done in a certain way.

I do have several of Julia Child's cookbooks especial her "Mastering the art of French Cooking". Its a great cook book that was geared to Americans in measurements and such.

Looking forward to this series. I'm finally excited to have found a channel like yours, especially when you are organizing and structuring the content.

I like how you are focussing on cooks at home, not in restaurants or in employed as cooks. I can see how your approach will have the widest and most useful way of replicating the great French cuisine.

For those who are wondering why I've not checked other channels, let me say I have. I have even checked famous chefs, TV shows, test kitchens, and even one idiot who has a French cooking channel but hardly ever cooks. All he's doing is tinkering with low-level hardware gadgets. I've also looked at "foodies" who travel to new places and sample the foods. Those are hit or miss in terms of quality or applicability. But finally I think Stephane's approach shows the most promise.

I have 22 of a possible 26 Le Cordon Bleu Home Collection Cookbooks. I use them 3 times a week. I love making the effort. The taste is incredible.

My book recommendation would be On Food and Cooking by Harold McGee. Not a cook book, but a comprehensive guide to the physics and chemistry of cooking. A bible for foodies in its own right.

I think you should make a video explaining good and bad quality dairy and meat products and produce etc. If you are familiar with American farms you know it's not focused on quality. I try to buy pasture raised grass fed dairy but it's rare and cost more. But the difference is huge.
