I had an Aunt who would make a Spanish Omelette for us that could feed 6-8 people! Sometimes we had this for dinner & she would add Ham & cheese too to make it it a hearty & filling meal! I miss it!

mother used to let the potatoes be on the pan itself and then pour the beaten eggs over works good too. Type of spanish omelette but we had named it potato egg over our growing back breakfast memories🎉🎉

Many cultures make this dish (or very similar)...I often make an Italian Frittata which is very similar, , tasty & great for using up leftovers.

I lived in Spain for 4 years and ate this. Now I make it but add green pepper to this recipe. I will try adding manchego cheese next time❤

Tortilla &/or Frittata!😋~suggestions~ Add 2 to 3 tbspns of plain flour, 1/2, half cup cream, garlic, (or garlic powder) 1 to 2 tspns of any stock powder, salt, white pepper, pinch of sugar .*If you want to taste your egg mix for seasonings? Dip your finger into mix or if you prefer drop a tspnful into pan or into microvave & taste to make adjustments. Sweet or smokeď paprika optional to sprinkle on top @ grilling stage along with sprinkled or sliced cheese to melt & brown .Cooking technique: Fry all ingredients until cooked through- add the egg/flour mix (after adding more butter/oil if not non~stick pan).Fry the underside slowly until half to 3/4 cooked, then place entire pan under the grill to slowly cook the top side. (Leaving pan handle standing out from under the grill!!😉) No flipping needed as with an omelette..simply slide out of pan when fully firm to touch *or flip over onto a serving platter. MUST shake pan to ensure it will slide & is separating from bottom & sides of pan, perhaps use a knife to cut around the edges first . Many more ingredients can be added>>fresh garlic/(garlic powder?)/sliced(tap out the seeds) tomatoes/salami &/or ham/ bacon-(any meats/seafood)/sliced or grated cheeses eg: tasty cheddar &/or both parmesan (even 2 -4 tbspns powdered parmesan) etc ..all can be fried with the onions & potato ~or better still~ fried/grilled/roasted/ separately *...all veges can be microwaved for a faster/less mess meal (as i do!). You can microwave whole potatoes, whole zuccini etc ..(then slice)~ but slightly browned/caramelised is even tastier-so if you can be bothered flatly slice veges then spray with oil, lay altogether on a baking tray to bake/grill..(this also reduces water content).Layering the cooked veges cheese etc in the pan AFTER pouring in egg mix makes the frittata more evenly spread & attractive, easy to assemble & to cut into wedges .*Of course add more egg[s] mix/flour/seasonings (etc) according to the amount of ingredients *& should reach depth to "just cover all" ingredients. Nice served cold, & for picnics & healthy school lunches!😊👍

I am Basque and we call this a tortilla. I make it every Friday with onion and peppers. Oh of course french bread also. LOVE these! Turning over half way through was evidently a comedy show because my family would come and see if it went smoothly or slid off the plate! AND they made bets! Nire familian bakarrik hori tradizio bihurtu da. Baina orain modu egokian egin dezaket, nire familiaren atsekaberako!😅
