To reach collagen stage, you need to boil till it breaks down the connective tissue that are found in the cartilage in-between the joints and bones. Best parts to use are end wing tips and claw of the chicken.

To achieve this, if you’re just boiling them on the stove, keep it at low simmer it takes about minimally 4 hours to break them down. You can use a slow cooker or if you have a pressure pot you can do so in about at least 2.5hours.

What you’re doing here is roasted chicken stock which is nice. However this isn’t collagen, you will know it’s collagen when the stock looks sticky and thick, with a milk like appearance, it shouldn’t be translucent like what is shown.

If your broth is that runny after being in the fridge over night, then it is NOT rich in collagen. My bone broth is gelatinous like jello after a night in the fridge, THAT'S how you know it's rich in collagen.
